Next Meat by SuFAB redefines taste and texture in alternative meats, addressing urgent sustainability needs. Designed with minimal environmental impact, it offers a high-quality alternative to conventional meat.
Using advanced data from 3D imaging, hyperspectral imaging, bioelectrical imaging, MRI, and finite element method (FEM) simulations, SuFAB decodes complex marbling and aligns microstructures to optimize taste and mouthfeel. FEM predicts texture transitions during eating, enhancing authenticity.
Two key technologies power this innovation: Foodructure and the Rheometer. Foodructure, a database tracking food microstructure behaviors, informs the Rheometer, a device that fine-tunes texture and flavor using 3D-printed food voxels. Together, they enable SuFAB to replicate and even enhance the nuanced experience of traditional meat.
Blending function with visual appeal, Next Meat recreates real meat's marbling and texture, using sustainable materials and eco-friendly distribution. Anticipated to launch in B2B and B2C channels, it aims to satisfy the projected surge in demand for premium, sustainable food options.
